Guatemalan Food: Criadillas

Criadillas, Testicles, in this case sheep’s (Mutton); are almost unexisting in the Guatemala’s city dwellers diet.

Luckily there are some places in the country side where you can still find them. Don’t be disgusted by appearances, it is a delicious and easy to prepared meat; you just sliced them open, add some salt and toss them on the grill. You can also have them as Ceviche. Either way they are delicious.
Almost impossible to find in Guatemala City, I saw them fresh at a slaughter house on Guatemala’s Highlands and of course I had to get some.
