Guatemalan Food: Revolcado

Revolcado, a very rich and dense stew;

there are a couple of variations, some people make it out of pig’s head, some others called for the “unused” parts: liver, tongue, hearts and brains of the animal.
It is very flavorful and the cooking makes the meats very tender.
