Though endemic to Africa, Guatemala provides a perfect terroir for the Tamarind Tree (Tamarindus indica).

We have learned to master the uses of this delicious fruit. Here in Guatemala we make some delicious sweets out of this fruit, there is a Guatemalan hard liquor infused with tamarind and it is one of my favorites; and something very refreshing a Tamarind soft-drink which I’ve just made for the first time and the recipe is very simple:
Sweeten enough water for your drink, add the fruit previously peeled off its hard skin, and let the fruit rest for about an hour in the water and then just filter it with a strainer.
Add some ice if you wish and you are ready to go.
This fruit contains lots of natural sugars and if you like your drinks with a kick, just let it ferment for a couple of days.
